Alto de la Ballena Tannat Viognier vines are managed to produce low yield to achieve the best grape concentration. Picking is done by hand. The Viognier was fermented in french oak barrels and its pressed skins were added to the Tannat, to ferment together at controlled temperature, after two days of cold maceration. After the blend was made, the wine was aged for nine months in new barrels of American oak. To preserve all its qualities it was lightly filtered and bottled without stabilizing.
