Alto de la Ballena Tannat, Merlot, Cabernet Franc is produced from grapes hand harvested in small batches at optimal maturity. Each grape was fermented separately in stainless steel tanks under temperature control, managed with daily pump overs to achieve a good extraction. The tannat was aged in American oak barrels for nine months; then the blend was made. At the bottling the wine was lightly filtered to preserve all its qualities.
