Many folks view rum in four different styles or categories….white and overproof rum, aged rum, rhum agricole and navy and dark rum. Although the production processes and uses of The sugar cane fruit are different, and as a slight contridiction many of use will see similarities between the four different styles in a blind tasting. Just food for thought.
Aged rum can cover a variety of options in the world of rum. Most are a bright and attractive golden amber colour, giving off fruity spices and caramel tastes to the tongue. Aged rums are usually from different vintages or batches that are incorporated together to ensure continuity of style and taste from year to year. Not to dissimilar of the winemaker who has the task of maintaining the vineyards reputation for continuity of style and taste, irrespective of any variation in a particular vintage. Many of these styles of rum highlight on their labels their age sometimes even the various ages that make up the final batch of rum.Although some rums like Mount Gay exhibit the XO mark similar to cognac on their label.Another highly recommended classic is Doorly's 12 year old Barbados aged rum.
Rhum agricole is different from most other rums in that it is produced from processed sugar cane juice. On the Caribbean Island of Martinique (famous for its rhum agricole) sugar cane is grown specifically for making this style of rhum. The process is first to ferment the fresh sugar cane juice and then to distill into a strong flavoured spirit. Probably the best style of rhum/rum to influence most rum Cocktails----just try it in a classic daiquiri.
Navy and dark rum are available in the main under two categories, some rums whose styles and origins go way back to the eighteenth and nineteenth century when basic rums were coloured to create the perception of old age, rich and tasty. Then we have quality traditional rums with no artificial flavourings or colour added and these full bodied dark rums have a nose of molasses, treacle and toffee with a smooth mellow finish combined with a lingering and memorable sweet flavour. Some notable navy and dark rums would be Goslings Black Seal, Myer's Original Dark and the Pusser's range of navy rums.
White and overproof rums----the statement is a little self explanatory and usually refers to overproof white rums with an alcohol content of greater than 57.5%, which is very high indeed. J Wray and Nephew's White rum is probably the best selling rum of its type in the world----it comes in at 63% a very potent white rum and not for the faint hearted. Another excellent white rum which is not over proof would be Matusalem Platino from the Dominican Republic at 40% abv.

Opthimus Premium Rum 15 Year Old, Dominican Republic Aromatic rum with complex aromas of honey, toffee, vanilla, coffee and dark chocolate with subtle oak notes
HMS Royal Oak contains the original blend of Coffey Still rums aged in American white oak Bourbon casks between 7 to 12 years. A nose of prunes, raisin fruit, toasty oak and tropical spices. An intense mouth-feel of sweet sultana fruit, tobacco and chocolate, with vanilla from the oak. Complex finish with sweet fruit, caramel and spice.
Rhum JM Agricole XO (Reserve Speciale) Martinique has been aged in re-charred bourbon barrels which provides a generous bouquet of toasted nut, lemon and sage on the nose. The palate picks-up fruit cake, brown sugar, dried mango and hints of vanilla, The finish is very long with lots of sweet warm spice.
Depaz VSOP Tres Vieux Rhum Agricole is aged for 7 years in small casks and is full of candied fruit and fresh plum flavours intermigled with chocolate, caramel and vanilla notes. The finish is suprisingly elegant and dry with a hint of pepper.
Clarke\'s Court #37 Blend, 8 Years Old Rum, Grenada Distillers A very special blend originally aged in oak barrels for 8 years, then blended and returned to the barrel for a second maturation. Exceptionally smooth and a rich exotic fruity flavour,
Chairmans Reserve 1931 Rum, St Lucia 4th Edition, A blend of Coffey and copper pot distillates from 1999 and 2004. Seven American white oak casks – Jim Beam, Jack Daniels and Buffalo Trace and two Port casks were used in the maturation process. The rums were then blended and left to marry in American oak for a further three months. A blend of rums ranging from seven to twelve years in age. Deep mahogany core with vibrant brown rim. Full nose of sweet honeyed fruit with hints of chocolate and tobacco. Good oak integration with vanilla tones. On the palate dry at first then opens up to display great depth and complexity. Concentrated with steeped raisin fruit, vanilla and a hint of roasted nuts. Balanced and an incredibly long finish 1931 is the pinnacle of fine rum making.
Rare Ron Viejo Rum Valdespino is a premium rum first imported back to Spain in 1940 from Cuba. Over decades the Solera in Jerez has been topped-up with selected Panama (70%) and Dominican Republic (30%) rums. The use of oloroso sherry casks in the aging process has given the rum rich deep gold and amber colour. On the nose it has mature oak notes, honey, orange peel and warm spices, with sherry aromas in the background. Complex citrus notes on the palate mix with spices and oak, combined with a delicate sherry and caramel aftertaste.
Zafra Rum Master Reserve 21 Years Old, Panama, A premium Panamanian rum produced using a small columm still and matured for at least 21 years in casks that formerly held bourbon. A pleasingly rich but interestingly dry rum with a perfectly silky mouthfeel and superb balance.
Admiral Rodney HMS Formidable Rum contains rums aged in American white oak Bourbon casks with the base distillates being aged for a minimum of 9 - 12 years in tropical heat which significantly speeds up the maturation. Wonderful honeyed raisin fruit, spices and vanilla. Complex palate of luscious sweets sultana fruit and balancing toasty oak. A long finish to leave a lasting impression of the brilliance of great rum.
Ron Cartavio 18 Year Old XO Peruvian Rum is the result of meticulous selection of the initial ingredients, the patient ageing in the American, French and Slovenian oak casks. Then, the consummate blending to then proceed to the sophisticated ageing solera process, no detail is left to chance in the crafting of its artisan masterpiece. The end result is a rum of some impeccability, rich, sweet, sumptuous molasse and lots of soft warm spice.
Diplomatico Single Vintage Rum, 2002 is a limited edition rum created through the carefully blending of selected reserves laid down to mature in 2001 and then aged in American oak. The nose without hesitation senses the aromas of sticky dates, dried mango and sweet spiced sugar. The rum is especially soft and honey like on the tongue, then follows, fruit and nuts, then soon after, nutmeg and cinnamon. The finish is very long lasting with lots of chewy toffee with a backdrop of warm spices.
Depaz Port Cask Finish Hors D\'age Rhum Agricole has a nose of a complex wealth of aromas,finished in old port casks.The palate has delicately oaked notes structured with vanilla, chocolate and fig jam. Subsequent aromas: a touch of mature port, hazelnut and dried fruit notes, gourmet cocoa and rose jam.
Opthimus Premium Rum 25 Year Old, Dominican Republic A limited production of premium Dominican Rum aged 25 years - soft, gentle and showing lots of elegance. One of the best rums made.
Diplomatico Ambassador Selection Rum is crafted from 100% heavy pot still rums and aged for a minimum of twelve years, the rum is aged in ex-bourbon casks and then finished for an additional two years in pedro Ximenez sherry casks. From the nose there are hits of rich raisins, stewed apricots and soft brown sugar. The plate picks-up more raisins with caramelised bananas, hints of nutmeg and cinamon, lots of warm caramel. The finish has lingering hints of liquorice root and dark sugars sweetened up by light sugar syrup.
