Cognac, Armagnac and Brandy are three popular names of a number of spirits produced by distilling wine. Brandy is an all-encompassing name that includes Cognac, Armagnac, as is Eaux de Vie and some brandies are produced by distilling fruit rather than grapes.
Brandy (brandy wine) is made from early cropping bitter in taste grapes in order to achieve a higher concentration of acidity, which helps both in the distillation process and brings out the desired brandy style of spirit prior to the finishing and aging process.
The most acclaimed brandies are of course Cognac and Armagnac, although today Italy, Spain, South Africa and a number of other counties around the world do produce some exceptional wine based brandies. On the other side of the coin, France and a few other countries do produce in large quantities wine based Brandies of a basic nature which do fill an important position in the market place.

A good quality cognac or brandy should be drunk neat, preferably in a brandy style glass or some in Spain prefer a sherry type copita glass. Make sure the brandy is at room temperature and one’s glass should ideally be warm. Pour one or two measures, swirl and bring to the nose to smell several times, then sip very slowly and savour in the mouth for as long as possible before swallowing. Practice and Brandy will be your friend for life.

Bache Gabrielsen 3 Kors VS Cognac has been blended from 25% Grande Champagne and Petite Champagne and 75% Fin Bois Cognac, matured in casks for two years. A deep amber colour, lively youthful bouquet, soft, rounded with a relatively light, fruity finish. This is a story of Prohibition and Norwegian ingenuity. During the period of 1916-1926 the sale of liquor was prohibited and could only be obtained on prescription for \"medicinal purposes\". The country became very ill. Francois Voyer Grande Champagne VS Cognac has a golden amber colour and a nose with strong flavours of freshly picked peaches and plums. The palate again picks-up these fresh notes and also hints of vanilla and nutmeg. The lingering finish gives way to warm spice.

Leopold Gourmel Premieres Saveurs 6 Carats Cognac has been aged on its fine lees to increase intensity and complexity, and is then matured in fine-grain Allier oak casks. The cognac is pale gold in colour and has a fresh, subtle aroma of white peaches and pear. On the palate there are notes of dried fruit, vanilla and a little warm spice. The finish picks-up the fruit again, plus small waves of oak.

Hine Rare VSOP Cognac is a golden-amber in colour cognac of fine quality which has been aged for an average of eight years. The nose hasa pleasant aroms of wild flowers and warm spice. It is full in in flavour, but very smooth and gentle on the tongue, also coming forward are dried fruits including mango, toffee and hints of ginger. In the long finish oak is picked-up as well as molasses and again hints of dried mango.
