Andalucia located in beautiful Southern Spain is the meeting point of two continents…..Africa And Europe, as well as the Atlantic Ocean and Mediterranean Sea is Sherry Wine country and most of the Sherry Wine producing region lies between two of Spain's finest and historic cities Cadiz and Seville. The white chalky landscape certainly conjures up flamenco dancers, performing white horses, original tapas and the king of aperitifs Fino or dry Amontillado Sherry Wine, with or without almonds. Palomino grape vines dominate the countryside, followed by two other Sherry Wine favourite grape varieties Moscatel and Pedro Ximenez grape vines.
A few snippits that hopefully will help……try drinking Sherry Wine with a glass that is very thin and transparent. Copitas are traditional and perfect and only fill your glass halfway, this will allow you to swirl and twirl the wine around the glass releasing all the bouquet and sweet aromas before you sip. Fino and Manzanilla Dry Sherry Wine should preferably be served chilled. Oloroso and Pedro Ximenez Sherry Wine can be served at room temperature, they go well with strong cheeses, also try nearly frozen on their own or with hot fruit pies. Amontillado and Palo Cortado Sherry Wine can vary in styles, therefore its best to experiment.

Delgado Zuleta Palo Cortado Monteagudo Sherry has a typical amber gold colour with strong nuances of roasted chestnuts and almonds. Although dry and complex in flavour, the tongue gathers hints of citrus, warm spices and nutmeg. This sherry pairs well with smoked salmon or smoked duck breast.
Amontillado Tio Diego Sherry Valdespino has an intense amber colour and the nose shows notes of both the biological and oxidative ageing, yeast, bread, but also dried fruits and a hint of toffee and caramel. Very dry, very complex, with a generous body and well balanced acidity.
Medium Dry Amontillado \"Contrabandista\" has a light mahogany colour with a bright amber border. The nose shows intense aromas of roasted hazelnuts, raisins and dates with butterscotch and toffee. This wine is medium-bodied with a long smooth finish and perfectly balanced moderate sweetness.
Dry Sack Oloroso 15 Year Old Sherry Williams & Humbert Collection, 500ml has a bright amber colour with an aroma reminiscent of dried mango and nuts. Full flavoured and complex to the palate, lots of dried fruit coming through, then a long and persistent aftertaste.
Oloroso Don Gonzalo VO Sherry Valdespino, Half Bottle, has a rich mahogany colour and has been aged in a solera system whereby the finished wine has an average age of over twenty years. The aromas are of caramel,toasted almonds and dried apricots. This medium dry sherry is very expressive and full of complexity. good acidity and a very long persistent finish.
Oloroso Solera 1842 VOS Sherry Valdespino, Half Bottle, has an average age of over twenty years and its colour is an intense mahogany. The nose has notes of rich dried fruits, including mango, also hints of nuts and caramel. Smooth, impressive and full bodied on the palate with excellent length.
Palo Cortado Dos Cortados 20 Year Old Sherry Williams & Humbert Collection, 500ml has a bright mahogany colour and a nose full of dried fruit, mango and warm spice. Solera 1842 VOS Medium Sweet Very Old Blend Oloroso, 20yrs Valdespino, is a sherry unique in character, intensity and complexity. An intense mahogany colour. Notes of rich dried fruits, nuts and caramel. Smooth and full bodied on the palate with excellent length. It is a mix of dry Oloroso (Palomino grapes from the Carrascal and Macharnudo areas) with 8-10% sweet, very old Pedro Ximénez. This results in a sugar contents of around 45-50g/l, which means the wine is off-dry rather than thoroughly sweet.

Oloroso Vintage 2003 Sherry Williams & Humbert Historic Collection has a light brown colour and a rather delicate nose with a mixture of nuts, citrus fruits and vanilla. The wine picks-up citrus notes on the tongue, followed by a mixture of oak and caramel. The finish is smooth with fruit and warm dry spices.
