Tequila and Mezcal are very similar alcoholic drinks, except that Tequila can only be made from the blue agave plant grown in a limited region close to the city of Tequila in the Mexican state of Jalisco. Sotol on the other hand can be made from other varieties of the agave plant and can be produced throughout the state of Jalisco and other areas too.
The agave which takes over ten years to mature and its heart which can weigh over fifty kilos is slowly cooked in large ovens to create a sweet liqueur which in turn is fermented. Quality Tequila is double-distilled in pot stills, continuous stills are used to produce the standard style of Tequila and most Mezcal.
Tequila is usually bottled in one of five categories:
Blanco or White………is a white spirit usually unaged, although some are aged for up to two months. This style is very popular in cocktails.
Joven or Gold………can be a blend of more than one category of tequila and is often flavoured with caramel and or sugar syrup.
Reposado……….is a tequila that has been aged in oak barrels for a period of two months to one year.
Anejo or Vintage……….has to by law be aged in small oak barrels for a minimum of one year, but less than three years.
Extra Anejo or Extra Aged…….would have been aged in small oak barrels for a minimum of three years.

Tapatio Blanco Tequila has a crisp green and spicy nose with floral notes and hints of nutmeg and cinnamon. Very peppery on the palate with refreshing agave sweetness. This tequila has a long and spicy finish with gentle sweetness appearing as the pepper fades.
Tequila Cabrito Blanco, Casa Centinela Distillery has a clear and brilliant colour with round notes of floral ananisette and fruit. The palate picks-up apple and lemon with some cooked agave, some sweetness with warm spice and grapefruit on the finish.
Tequila Cabrito Reposado, Casa Centinela Distillery has a bright golden colour and apple fragrances on the nose. The palate senses lots of fruit, including apple, pear and banana, with anisette and caramel in the background. The finish is long and exhibits flavours of oak and a little honey.
Jaral de Berrio Mezcal is at first sweet on the nose, then comes hints of roasted agave and small amounts of warm sweet spices. The palate enjoys lots of roasted walnuts and hazelnuts, plus nuances of black pepper. The finish is long and senses caramel flavours.
Jose Cuervo Tradicional Reposado Tequila is produced by the small batch methods laid down by Jose Cuervo and overseen by the 10th generation of the family. Estate grown agave plants are slow cooked in clay adobe ovens , then double distilled in small artisanal stills. After resting in white oak casks this legendary blue agave tequila delivers a smooth, well rounded palate of fine spices and oak notes. Perfect for sipping straight or in classic cocktails such as the paloma or margarita.
Tequila La Cava de Don Agustin Blanco is a beautiful unaged tequila. Made with 100% agave, this tequila has tropical hints of mango and coconut cream, laced with cinnamon which are inviting on the nose. The gentle sweet taste of powdered sugar, cinnamon and pepper is combined with an end note of dried fruits and a gentle warming spice. An ideal sipping tequila.
Mezcal Bruxo X Espadin Barril has aromas of citrus, flowers and peanuts are followed by orange peel, fresh fruit, chamomile, mineral and honey notes on the tongue. Bruxo X Mezcal is made from a blend of 80% espadin agave spirit and 20% barril agave spirit. The name Bruxo is derived from the word Brujo, which means shaman, but is spelled with an x to reflect the pronunciation of Oaxaca, where Bruxo is based.
La Venenosa Raicilla Sierra Occidental de Jalisco has a sourness overlayed with sweet lemons, apples and grapes. Sweetness is at the heart of this, with syrupy notes balanced by the sourness and delicate touches of spice. A fruity palate, with fruit loaf soaked in unsweetened lemon juice spread with sweet butter and dusted icing sugar. Soft lingering finish, fading away to a dry apple skin end.
La Venenosa Raicilla Costa de Jalisco is very savoury on the nose, but much sweeter and softer on the palate, with a buliding background of white pepper spice. Arrayed on top of that is orchard fruit, cooling menthol and mint, stony minerality and aniseed ball spice. The finish highlights green leaves, smoke, mint and a lingering note of lemon.
