Grappa di Nosiola, Bruno Pilzer, Italy, the grapes are from vineyards situated in the lower Val di Cembra and the Pressano hill in Trentino. The fresh, unfermented Nosiola marc arrives at the distillery. The grape marc is then fermented. After fermentation the must is transferred to the still, which is heated gradually in order to preserve the finesse of the Nosiola. The grappa is then held in tank at a high alcohol level (70% vol) until just before bottling in order to retain its freshness. Delicate, floral and herbaceous aromas on the nose, with a spicy edge. Complex on the palate with a long, perfumed finish.
