Sparkling wine is a general term for various methods of getting carbon dioxide into a wine, its usually through two popular methods: Natural fermentation either in a bottle (traditional method) or in a large tank under pressure (charmat process) and secondly through a little bit of technology by injecting carbon dioxide into the wine, alas the bubbles and sparkle do not last as long as the traditional method. Both processes can be used in the production of white, rose and red sparkling wine.

Most wine experts will say France probably carries the flag for the most high quality sparkling wines being made today through either of the two production processes, although most are made utilizing the traditional method as per champagne. some good examples of top quality French sparkling wine being: Cremant d' Alsace, Cremant de Loire, Cremant de Bourgogne, Cremant de Limoux, Cremant de Savoie and Cremant de Bordeaux.

Outside France, we have a number of countries with excellent reputation for producing top quality sparkling wine, some good examples being: Cava from Spain, Asti and Prosecco from Italy, German Sekt. From the New World we have New Zealand, Chile, Australia and South Africa matching most of the top European sparkling wines.

Last but not least, we cannot forget the fine sparkling wines being produced in the UK, especially along the South Coast of England. England now has well over one hundred vineyards producing sparkling wines, with Pinot Noir, Chardonnay, Pinot Meunier and Muller-Thurgau being the most popular grape varities. Three of these varieties being the grapes of Champagne. Through the help of similar soil structures to Champagne and warmer growing seasons especially in Sussex and Kent, English Sparkling wine has been highly praised for its quality, beating Champagne in a number of competitions and collecting over one hundred and twenty medals and trophies in just one year 2015.

Nyetimber \'Tillington Single Vineyard\' English Sparkling Wine has a light gold colour in the glass with hints of silver and tiny bubbles on the eye. The nose begins with the toasted topping of crème brulee and meringue before the wine continues with time in the glass to open and build in intensity. Flavours of strawberry and cherry emerge.
